Raisin Bran Cereal Muffins

Ingredients

  • 12 cups raisin bran cereal
  • 7 cups Milk soured* or buttermilk
  • 6 cups all-purpose flour
  • 3 Tbsp. baking powder
  • 2 Tbsp. ground cinnamon
  • 2 tsp baking soda
  • 2 tsp salt
  • 2 cups packed brown sugar
  • 4 egg
  • 1 cup butter melted

Directions

  1. Preheat oven to 375 °F (190 °C). Butter nonstick muffin pans or line with paper liners.
  2. In a bowl, combine bran cereal, raisins and soured milk; let stand for 5 min.
  3. In a large bowl, combine all-purpose flour, baking powder, cinnamon, baking soda and salt.
  4. Whisk brown sugar, egg, butter into milk mixture.
  5. Pour over dry ingredients and stir just until moistened.
  6. Spoon into prepared muffin pan.
  7. Bake for about 25 min or until tops are firm to the touch.
  8. Let cool in pan for 5 min. Transfer to rack to cool completely.
