Ingredients

  • 6 rice paper sheets
  • 2 eggs
  • dash of maple syrup
  • 1 tbsp coconut oil
  • flaked almonds for topping filling
  • Filling:
  • 1 egg
  • 2 tbsp coconut sugar
  • 1 tbsp cashew or almond butter
  • dash of vanilla extract (generous)
  • 1/2 cup almond flour

Directions

  1. Combine your filling ingredients, set aside
  2. Combine your pastry ingredients in a saucepan (besides the flaked almonds and rice paper)
  3. Dip one rice paper in the filling mixture, then add a tablespoon of the filling to the rice paper
  4. assemble as per the video and top with flaked almonds
  5. Air fry for 10 minutes on 180°C
  6. Top with powdered sugar and enjoy while warm!!
