  • 6 Poblano Peppers
  • 2 Tablespoons minced garlic
  • 1 cup olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper

Directions

  1. Cook peppers either on the grill over high heat or an open flame until the skin is blackened. Once they're blackened, place in an appropriate sized container and cover TIGHTLY with plastic wrap. Wait until peppers cool (about 10 minutes). Peel the blackened skin off, rinse if necessary. Cut into strips and mix with garlic, oil, salt and pepper. Let marinate for at least an hour before use.
