Rustic Mediterranean Shakshuka

  • 2 tbsp olive oil
  • 1 small yellow onion, finely chopped
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/4 tsp chili flakes (optional, for heat)
  • 1 can (400g) crushed tomatoes
  • Salt & black pepper, to taste
  • 4-6 large eggs
  • Fresh parsley or cilantro, chopped
  • Crusty bread, for serving

Directions

1. Sauté Aromatics:

  1. Heat olive oil in a skillet over medium heat.
  2. Add onions and red pepper. Cook until soft (about 5 minutes). Add garlic, cumin, paprika, and chili flakes. Cook 1 minute until fragrant.

2. Simmer Sauce:

  1. Pour in crushed tomatoes. Season with salt & pepper. Simmer uncovered for 10-15 minutes, until slightly thickened.

3. Add the Eggs:

  1. Make small wells in the sauce and crack the eggs in. Cover and cook until whites are just set but yolks are still runny (about 5-7 minutes).

4. Finish:

  1. Sprinkle with fresh parsley. Serve straight from the pan with toasted bread.
  2. Optional: Crumble in feta or dollop with labneh for extra creaminess.
