Sag Aloo With Chicken

Ingredients

  • 250g new potatoes
  • 1/2 tbsp coconut oil
  • 4 spring onions
  • 2 garlic cloves
  • 2cm ginger
  • 1 tbsp garam masala
  • 1 chicken breast fillet
  • salt & pepper
  • 2 large handfuls of baby spinach
  • 1/2 bunch of coriander
  • lemon juice

Directions

  1. Prick each potato with fork.
  2. Place in bowl, pour over splash of water and microwave for 2.5mins at 900w.
  3. Leave for approx 30secs then microwave for another 3mins. Leave to stand for 30 secs then cut them in half.
  4. Melt coconut oil in wok or large frying pan over med to high heat. Add spring onions, garlic, ginger and fry for 1 min, stirring reg.
  5. Tumble in spuds and mix well. Sprinkle in Garamond masala and fry for 30 secs, stirring constantly - be careful not to let it catch.
  6. Quickly add chicken, along with 2 tablespoons of water, to help cook chicken and stop spices burning.
  7. Season generously with salt and pepper and add plenty of spinach.
  8. Remove from heat, sprinkle in coriander and finish with a squeeze of lemon juice.
