Sarah’s Chilli Scrambled Eggs With Fetta
Ingredients
- Eggs: 4 eggs
- Feta: 200g Danish feta, chopped
- Chilli: 2 red Bird's eye chillies, finely chopped
- Oil: 1 teaspoon olive oil
- Garnish: 1/4 avocado (sliced), 1 tablespoon fresh parsley, extra chilli, sea salt, and black pepper
- Method
- Heat: Add olive oil to a frypan over medium-high heat.
- Whisk: Whisk the eggs in a bowl.
- Cook: Add the chopped chilli to the egg mixture, then pour into the pan.
- Combine: Add the Danish feta and cook, stirring occasionally to scramble.
- Serve: Plate the eggs alongside the sliced avocado, topped with parsley, extra chilli, salt, and pepper.
