Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a skillet over medium heat, cook the sausage until browned and crumbled. Drain and let cool slightly.
In a mixing bowl, combine the cooked sausage with softened cream cheese until well mixed.
Unroll the crescent dough and separate into triangles. If desired, cut each triangle in half lengthwise for smaller crescents.
Place a spoonful of the sausage mixture on the wide end of each triangle and roll the dough around the filling towards the point.
Place the crescents on the prepared baking sheet and, if using, brush with an egg wash for a golden finish.
Bake for 15-18 minutes, or until golden brown and the dough is cooked through.
