Preheat oven to 180°C/160°C fan forced. Line a baking tray with baking paper. Place tomatoes on the prepared tray and roast for 10 minutes or until slightly wilted.
Whisk together the eggs and milk in a large shallow bowl.
Lightly spray a large non-stick frying pan with oil and heat over medium heat. Dip bread slices, 1 at a time, in egg mixture until well soaked. Cook for 2 minutes each side or until golden brown and egg is set. Repeat with remaining bread and egg mixture.
Serve French toast topped with tomatoes, avocado and basil.
