Soak the cashews overnight in water. Drain the water and blend in a high-speed blender with one cup fresh water, lemon juice , salt, onion powder, and garlic. Add to a skillet to warm through. If the sauce is too thick, add almond milk or water to desired consistency. Stir in Parmesan cheese. Serve with Trader Joe’s, chicken meatballs or cooked chicken. I served over pasta with broccoli.
