In a separate bowl, whisk vanilla pudding mix, milk, mint extract, and a few drops of green food coloring until thick. Spread over the cream cheese layer.
Top with the remaining whipped topping, spreading evenly.
Garnish with chocolate chips and green sprinkles. Refrigerate for at least 4 hours before serving.
