Shredded Beef Tacos

Ingredients

  • 3-5 lbs beef roast
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 1 or more cloves of garlic
  • 1 can rotel tomatoes
  • 1 can diced green chilies
  • Salt and pepper to taste
  • Chili powder and ground cumin to taste
  • Chopped fresh cilantro
  • Serve with:
  • Salsa
  • Shredded lettuce
  • Sour cream
  • Shredded cheese

Directions

  1. Brown meat in skillet with small amount do oil, until browned on all sides. Remove to preheated crockpot.
  2. Add about 1/4 cup water to hot skillet and stir, loosening bits of browned meat and juices. Pour over the meat and add onions, pepper, garlic, chillies, and drained tomatoes. Sprinkle with salt, pepper, chili powder, and cumin to taste.
  3. Cook overnight until meat shreds easily with a fork.
  4. Just before serving add cilantro to taste.
  5. Serve with warm taco shells, shredded lettuce, sour cream, shredded cheese and salsa.
