Ingredients

  • 1 each; red, yellow, orange, green & purple bell peppers
  • 1 red onion
  • Dressing:
  • 1 jalapeño minced
  • 2 Tbs tarragon vinegar
  • 1 Tbs Dijon mustard
  • 2 tsp sugar
  • 1 tsp salt
  • 1/4 tsp Tabasco
  • Fresh ground pepper
  • 1/4 Cup veg oil
  • 2 Tbs peanut oil
  • 1 Tbs caraway seeds toasted
  • 2 tsp grated lime zest

Directions

  1. Julienne peppers & very thinly slice onion.
  2. For dressing; mix all but oils & then slowly add oils mixing till thick.
  3. Refrigerate at least 3 hrs
