Meatballs:
Mix beef with onion, chives, onion powder, garlic, salt, pepper & chipotle powder
Form into 16 balls and smoke @ 225º until 155º.
Add to sauce
Sauce:
In a grill-proof pan melt butter.
Whisk in cream, truffle powder to taste, black pepper, salt, garlic paste & red pepper.
Whisk in 2 cups of Parmesan until melted.
Add in meatballs and continue to smoke until the balls reach 165º
Top with spring onions and remaining parmesan
Serve on linguine, Zoodles, cauliflower rice, etc.
