Smoked Onion Jus PH

Ingredients

  • 4 Cups Smokes Onions
  • 4 Tbsp Cooking Oil
  • 8 cups Chicken Stock (house made)
  • 6 ea Garlic cloves- whole
  • 5 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 cups white wine
  • 2 Tbsp black peppercorns- whole
  • 4 Tbsp salt

Directions

  1. In saucepan heat oil over medium heat, add onions, garlic, herbs, and peppercorns, sauté lightly.
  2. Add wine and reduce by 1/2. Add chicken stock and simmer for about 30 mins and let reduce. Remove from heat and strain through fine mesh sieve. Taste and add salt if needed.
