Soft and Chewy Chocolate Peanut Butter Cookies

Preheat oven to 375 degrees.
Place all ingredients in a bowl, Beat with mixer on low speed for 2 minutes. Beat on medium speed an additional 2 minutes.
Shape into 1 inch balls. Place 2 inches apart on baking sheets. Flatten each ball, in criss cross pattern, with tines of fork dipped in sugar.
Bake 7-8 minutes or until edges of cookies are set. Cool 2 minutes on baking sheet the move to wire racks to cool completely.
**can add 1/2 cup chopped peanuts to dough if desired
