Spaghettis Sauce

Ingredients

  • 25 lbs. Tomatoes
  • 4 large green peppers
  • 4 large onions
  • 2 12oz cans tomato paste
  • 1/4 cup olive oil
  • 2/3 cup sugar
  • 1/4 cup salt
  • 8 cloves garlic
  • 4 tsp dried oregano
  • 2 tsp dried parsley flakes
  • 2 tsp basil
  • 2 tsp crushed red pepper flakes
  • 2 tsp Worcestershire sauce
  • 2 bay leaves
  • ---------------------------------------
  • 2 tbsp. for each jar

Directions

Peel tomatoes/Broil in oven until skin browns

add to pot
Pulse pepper and onions in blender
add all ingredients
bring to boil

reduce heat
simmer uncovered 4-5 hours
stir occasionally
----------------------
remove bay leaves
----------------------
Add 2 tbsp. of lemon juice to each jar
fill jars leaving 1/2" of air on top
process for 40 min
