Spanish Rice

Ingredients

  • 1-2 Tbsp olive oil
  • 1/2 onion, chopped fine
  • 1 clove garlic, minced
  • 1 cup rice
  • 1-2 cups chicken or vegetable stock (use same amount as water needed per rice directions)
  • 1 heaping Tbsp tomato paste
  • 1 can diced tomatoes
  • 1 can diced green chilies
  • Pinch oregano

Directions

  1. In a skillet over medium/high heat, brown rice with onion and garlic in the olive oil.
  2. In a large saucepan, bring chicken broth to a boil. Add tomato paste, diced
  3. tomatoes, green chilies, and oregano.
  4. Add browned rice and simmer, covered, on low 15-25 minutes (amount of time per rice directions) or until rice is tender and liquid is absorbed.
  5. Let sit 5 minutes.
