Brush one piece of lavash bread lightly with olive oil. Place in oven for 5 mins, flipping half way through, or until lightly browned and crisp.
Spread a light layer of soft goat cheese onto lavash.
Thinly slice 2 c of baby spinach into long ribbons. In a large bowl add sliced spinach. 1 c Craisins and 1 c shelled walnuts. Gently toss spinach, cranberries and walnut mixture. Then top with crumbled goat cheese. Sprinkle lightly with salt and pepper, cut into rectangles and serve.
