SPLIT PEA AND TURMERIC SOUP

Ingredients

  • INGREDIENTS 1 tsp. Ground turmeric
  • 2 Bay leaves
  • Black pepper, to taste
  • 8–10 cups Vegetable stock Fresh flat-leaf parsley, chopped, for garnish (optional) 1 lb. Yellow split peas (about 2 1/2 cups) 1 lg. Yellow onion, diced
  • 3 Celery stalks, diced
  • 3 med. Carrots, diced 2 tsp. Fine sea salt 1 tsp. Dried thyme
  • 1 tsp. Ground turmeric
  • 2 Bay leaves
  • Black pepper, to taste
  • 8–10 cups Vegetable stock Fresh flat-leaf parsley, chopped, for garnish (optional)

Directions

INSTRUCTIONS:

  1. • Rinse the split peas until the water runs clear.
  2. • Place all ingredients in a large pot. Bring to a boil over high heat, then cover
  3. and simmer for about 1 1⁄2 hours, until split peas are tender. Enjoy!
