Strawberry Mini-Spongecakes

Ingredients

  • 5 eggs –separate 3 of them
  • 1.2 oz freeze-dried strawberries (this is a typical large bag, if you buy in bulk or have different sized bags, you’ll have to weigh them)
  • 3 Tbsp honey
  • 2 Tbsp ghee (or substitute butter, palm shortening, lard or coconut oil)
  • 1/2 cup chestnut flour (this also works with blanched almond flour)
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/2 tsp cream of tartar
