  • 8 ounces. fresh green beans
  • 1 teaspoon olive oil
  • 2 ears fresh corn, kernels removed
  • 1 tablespoon fresh minced ginger
  • 1 scallion, sliced
  • 2 Persian cucumbers, or other thin-skinned cucumbers, sliced
  • 1/2 pound cherry tomatoes, halved
  • 1/4 cup ponzu sauce
  • 1/4 cup rice wine vinegar
  • 2 tablespoons toasted sesame oil
  • sesame seeds, for garnish
  • sliced scallions, for garnish
