  • 4 tablespoons unsalted butter, at room temperature, plus 4 tablespoons for melting
  • 1 cup whole milk
  • 2 large eggs, lightly beaten
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 tsp salt
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup creme fraiche
  • 2 ounces (1/4 cup) caviar, your choice
  • 1/2 pound gravlax or other cured salmon, thinly sliced
  • Fresh chives, for garnish
