- 1.25 kg sweet potatoes
- 260g young leaf spinach
- 4 x 400g can chopped tomatoes
- 2 x 400g can butter beans
- 4 garlic cloves (crushed)
- 2 medium onions (finely chopped)
- 2 Tbsp olive oil
- 2 tsp ground cumin
- 2 tsp ground coriander
- 3 tsp smoked paprika
- 500ml vegetable stock
- juice of 1 to 2 lemons
- large bunch of fresh coriander
- salt & pepper
