Tara's Tomato Sauce for Canning

Ingredients

  • 20 lbs Tomatoes
  • 1 cup Chopped Onion
  • 8 cloves Garlic
  • 1 Tbsp Olive Oil
  • 1/4 cup finely minced Fresh Basil
  • 1 Tbsp bottled Lemon Juice per hot jar

Directions

  1. Steralize Jars/Lids Prepare boiling water canner (get water simmering)
  2. Wash tomatoes, remove core, set aside
  3. Sautee Onion and garlic in Olive Oil, add Tomatoes, bring to a boil & let simmer 20 Minutes
  4. If you want a smoother sauce you can puree mixture
  5. Combine tomato Mixture and Basil in a large pot, bring to a boil, simmer stirring often until volume is reduced by 1/2
  6. Add 1 Tbsp Lemon juice into each hot jar. Ladle hot sauce into hot jars leaving 1/2 inch headspace
  7. Prosses filled jars in boiling water canner for 35 minutes
  8. Remove jars and let cool undisturbed for 24 hours, check seal
