THAI GREEN CURRY SPRING ROLLS

Ingredients

  • 14 oz block of extra firm tofu
  • 1 Tbsp soy sauce
  • 1 tsp freshly grated ginger
  • Sauce
  • 1 Tbsp oil
  • 1 clove garlic, minced
  • 1 ½ Tbsp green curry paste
  • ½ tsp lime juice
  • ½ tsp sugar
  • ½ cup full fat coconut milk
  • If you have it, 2 kaffir lime leaves
  • Everything Else
  • 2 oz (60 g) thin rice vermicelli (rice noodles)
  • 8 to 10 rice flour spring roll wrappers
  • 1 red bell pepper, thinly sliced
  • 1 large carrot, shredded
  • 1 handful of Thai basil (can sub sweet basil or mint if you can’t find Thai basil)
  • 1 handful cilantro
  • 1 lime
