The Best Potato Soup Recipe

Ingredients

  • 1 (30 ounce) bag frozen hash-brown potatoes (I used cubed)
  • 2 (14 ounce) cans chicken broth (see Note)
  • 1 (10.75 ounce) can cream of chicken soup
  • 1/2 cup chopped yellow onions (I used 1/2 tsp of onion powder instead)
  • 1/4 teaspoon ground black pepper, (more to taste)
  • 1 (8 ounce) package cream cheese (softened)
  • Optional Toppings: cheese (we used three pepper cheese), bacon (we used thick cut jalapeño bacon), sliced green onions
  • Notes - I added diced 1-2 jalapeños, garlic powder, and corn
