Three Bean Stew

Ingredients

  • 1T oil
  • 1 onion, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 1 med zucchini, diced
  • 4 med mushrooms, diced
  • 400g tin of black beans, cannelloni beans and kidney beans -drained and rinsed
  • 400g tin tomatoes
  • 400g tin cream of tomato soup
  • 150g (1/2c) water
  • 1vege stock cube, crumbled
  • 1t dried oregano
  • Salt/pepper
  • Small bunch fresh parsley, chopped
  • 3T Cremerius fraiche or cream cheese or cream

Directions

  1. *Heat the oil in a large saucepan. Add carrot and onion. Cook over med heat, stirring regularly until onions soften.
  2. *Add garlic, zucchini and mushrooms. Cook for 5 min until veges are fairly soft.
  3. * Add all the beans, tomatoes, soup, water, stock cube and oregano.
  4. *Bring to a simmer and cook for about 30 minutes until liquid has reduced to produce a thick sauce.
  5. *Add parsley and cream and mix before serving.
