Tilapia Monterey

Ingredients

  • 1+ garlic clove, minced
  • 1 T butter
  • 8 oz Baby Bella sliced mushrooms
  • 1/4 C white wine (or more)
  • 4 Tilapia filets
  • 1 C shredded Monterrey Jack or other nice cheese
  • 1 T minced parsley or sub dry parsley

Directions

  1. In a skillet Sauté garlic in butter for one minute
  2. Add mushrooms and cook until done
  3. Set aside in a dish
  4. Add wine to the skillet, bring to a boil, cook and stir for 5 min, Pour wine over mushrooms
  5. Dry fish completely, add jalapeño infused Olive Oil to pan, add fish and cook 3 min on each side
  6. Return mushrooms to pan, warm and then top with cheese and parsley
