#Tomato Sauce - Basic

Ingredients

  • 2 cans (28-oz) whole peeled San Marzano plum tomatoes crushed by hand
  • 1/4 cup olive oil
  • 1 medium onion, diced
  • 1 stalk celery chopped
  • 2-3 cloves garlic, thin sliced
  • 1 teaspoon salt (maybe more later)
  • 1/2 teaspoon black pepper
  • pinch of red pepper flakes (optional)
  • 1/2 cup white wine
  • 1 or 2 parmigiana rinds
  • 2 tablespoons chopped fresh basil
  • 1/2 can water from rinsed tomato cans
  • 2 tsp sugar

Directions

  1. Sweat onion, oil, garlic, celery, optional red pepper with a pinch of salt. Cook till liquid gone
  2. Add wine and reduce till almost gone
  3. Add tomatoes, water, basil, sugar, black pepper, and 1 tsp salt
  4. Cook for 2 hours at a simmer covered stirring often. Add more water as necessary
  5. Halfway through, use immersion blender to smooth.
  6. Test for salt
