Tuna, Mayo & Cucumber Sandwich

Ingredients

  • 185g tuna, canned in springwater, drained (144g)
  • 30g mayonnaise, reduced fat
  • 83g high Fibre bread (2 slices)
  • 233g cucumber, unpeeled and sliced
  • 26g baby spinach

Directions

  1. In a small bowl, combine tuna and mayonnaise.
  2. Spread one slice of bread with the tuna mayo mix. Top with a few slice of cucumber and spinach. Season and close with remaining slice of bread. Serve remaining cucumber slices alongside the sandwich.
  3. TIP: Feel free to add any extra veggies that you may have in your fridge to your sandwich like onion or lettuce.
