Turkey Meatballs With Roasted Broccoli& Mashed Pumpkin

Ingredients

  • 120g Onion, any type, finely chopped
  • 12g minced garlic
  • 14g fresh basil, chopped
  • 16g egg yolk
  • 2g pepper
  • 880g turkey mince
  • Extra ingredients - 1 serving:
  • 134g broccoli florets
  • 5ml olive oil
  • 180g pumpkin, diced
  • 1g pepper

Directions

  1. Preheat oven to 200C fan forced.
  2. Heat a non-stick frying pan to medium heat. Sauté the onions and garlic until tender, about 5 to 7 minutes. Remove from heat.
  3. In a medium bowl, combine the onions, garlic, basil, egg yolk and pepper and mix well.
  4. Add the turkey, gently mix with clean damp hands until just combined. Form the mixture into 5cm meatballs about 1 heaped tablespoon each.
  5. Place on a baking tray and bake for 10 to 15 minutes, or until meatballs are cooked through.
  6. Makes about 24 meatballs (4 meatballs per serving).
  7. TIPS: if you prefer, you can cook the meatballs in the non-stick frying pan until golden brown and cooked through.
  8. You can add 1/4 cup grated parmesan cheese.
  9. You can freeze uncooked meatballs in an airtight container for up to 3 months.
  10. Thaw meatballs in the refrigerator overnight before baking.
