Turkish style borlotti beans (Barbunya pilaki)

Ingredients

  • INGREDIENTS
  • 1 kg fresh borlotti beans, podded (c. 450-500 g/2½ cups podded weight), or see below for using dried beans
  • 100 ml (⅖ cups) extra virgin olive oil (I use a mild one)
  • 1 medium size onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 1 Tbsp tomato paste
  • 2 medium size tomatoes, peeled and chopped or grated (c. 250 g total)
  • 2 medium sized carrots, peeled and cut into 1 cm. cubes (c. 175 g total)
  • 1 medium size potato, peeled and cut into 1 cm. cubes (c. 125 g total, optional)
  • 1 lemon, finely sliced, to garnish (optional)
  • water
  • salt and pepper
