Vanilla Almond Coconut Granola

Ingredients

  • 3 cups rolled oats
  • 1 cup chopped almonds
  • 1/2 cup shredded coconut
  • 2 Tbs hemp seeds
  • 2 Tbs flax
  • 1/2 tsp salt (a little less)
  • 1/3 cup melted coconut oil
  • 1/3 cup maple syrup
  • 1 Tbs vanilla extract
  • 1/4 tsp almond extract

Directions

  1. Preheat oven to 350.
  2. Add oats, almonds, shredded coconut, hemp seeds, flax and salt to a bowl. Toss to combine.
  3. Add in remaining ingredients and then toss until completely coated.
  4. Spread into an even layer on a large, parchment lined baking sheet.
  5. Bake for 10 minutes. Rotate the tray/toss granola and bake for another 10-11 minutes. Remove and let cool completely.
  6. Store in an airtight container on the counter or in the freezer.
