Ingredients

  • 1 Tbsp. Olive Oil
  • 1 Medium Onion
  • 1 Tsp. Minced Garlic
  • 1 Medium Yellow Squash
  • 1 Medium Zucchini
  • 1 Medium Potato
  • 1 Medium Tomato
  • 1 Tsp. Dried Thyme
  • Salt and Pepper to taste
  • 1 Cup Shredded Italian Cheese

Directions

  1. 1. Preheat oven to 400 degrees F.
  2. 2. Sauté onion and garlic in olive oil until soft. Thinly slice other vegetables.
  3. 3. Spray 8x8 cooking dish with non stick spray. Spread garlic and onion on bottom. Place sliced veggies vertically in alternating pattern. Sprinkle with salt, pepper, and thyme.
  4. 4. Cover with foil and bake for 30 minutes.
  5. 5. Remove foil and sprinkle cheese in top. Bake for another 15 - 20 minutes.
