Vietnamese Chicken Salad

Ingredients
- Dressing
- 1/3 c lime juice plus wedges for garnish
- 3 1/2 tbsp fish sauce
- 1 1/2 tsp sugar
- 1 small red onion sliced thinly
- 4 cups (14 oz) red or green cabbage shredded
- 4 med carrots peeled and shredded on box grater
- 3 jalapeños seeded and sliced very thin
- 1 c lightly packed basil leaves, torn
- 1 c lightly packed cilantro roughly chopped
- 1 1/2 c peanuts roughly chopped
- 2 med garlic cloves, grated finely
- 3 cups cooked chicken, shredded, can also use duck
Directions
Make dressing
Marinate onion for at least 10 minutes
Put remaining ingredients together in large bowl.
Pour dressing over salad and toss.
