Water Kefir with fresh orange/lemon /ginger juice

Ingredients

  • 3 - 4 tbsp of kefir grains
  • 3 - 4 tbsp of cane sugar
  • 3/4 liter of cold tap water
  • 1 orange, juice
  • 1 lemon, juice
  • 1 thumb size fresh ginger, grated

Directions

  1. In a 1 liter glass bottle with a patent closure top pour 3/4 liter cold water.
  2. Add the kefir grains and sugar.
  3. Shake and leave for fermentation (F1) in a window shelf for 3 days.
  4. It should bubble when you move the bottle a couple of times every day.

At the end of day 3:

  1. Sieve the fluid water kefir from the grains.
  2. Start a new F1 with the grains in a new bottle.
  3. Add the fresh orange/lemon/ginger juice to the sieved water kefir and pour it back into the botle.
  4. Shake and leave for another fermentation (F2) in the window shelf. Again 3 days.
  5. Cool in the fridge.
  6. Drink it.
