WH101 Seafood Boil Base

Ingredients

  • 1/2 cup canola oil
  • 5 lbs onions diced
  • 1/2 cup 1/2 cup, minced garlic minced garlic
  • 2 cans tomato paste
  • 2 container containers of chicken base
  • 1/2 gallon white wine
  • 5 tablespoons thyme dried
  • 2 1/2 tablespoons basil dried
  • 2 1/2 tablespoons smoked paprika
  • 5 bay leaves
  • 2 1/2 tablespoons black pepper
  • 1/2 cup salt
  • 8 gallons water

Directions

  1. In large pot, heat oil over medium heat, add garlic and onions and cook, stirring frequently until softened
  2. Add tomato paste and chicken base, stir well. Cook for 2 to 3 minutes or until caramelized slightly
  3. Add dried thyme, basil, smoked paprika, bay leaves, and black pepper. Stir to bloom the spices.
  4. The glaze with white wine and reduce by approximately half. Make sure to scrape any food caramelized to the base at the bottom of the pot.
  5. add 8 gallons of water. bring to a simmer.
  6. divide into 3 buckets, each w/ a full white scoop of ice.
