Yellow Cake and Chocolate Icing
Ingredients
- 3 eggs
- 1 egg yolk
- 1/4 c butter melted
- 1 cup half n half
- Vanilla
- 1/3 c stevia/erithytol
- 1/2 c coconut flour
- 1 tsp baking powder
- 1/4 tsp salt
- Icing
- 1 stick butter softened
- 2 tbsp stevia/erithytol
- 1/2 bar 90% Lindt

Directions
- Cake
- Blend eggs well
- Add the rest of the wet ingredients and sweetener. Mix well.
- Dump in the dry ingredients. Mix well.
- Mix in sprinkles for confetti cake.
- Spoon into muffin tins or cake pans. Bake 350.
- Springform pan 30 minutes.
- 24 mini cupcakes 20 minutes.
- Icing
- Blend all ingredients well
- Spread on cooled cupcakes.
