Ingredients

  • 3 eggs
  • 1 egg yolk
  • 1/4 c butter melted
  • 1 cup half n half
  • Vanilla
  • 1/3 c stevia/erithytol
  • 1/2 c coconut flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Icing
  • 1 stick butter softened
  • 2 tbsp stevia/erithytol
  • 1/2 bar 90% Lindt

Directions

  1. Cake
  2. Blend eggs well
  3. Add the rest of the wet ingredients and sweetener. Mix well.
  4. Dump in the dry ingredients. Mix well.
  5. Mix in sprinkles for confetti cake.
  6. Spoon into muffin tins or cake pans. Bake 350.
  7. Springform pan 30 minutes.
  8. 24 mini cupcakes 20 minutes.
  9. Icing
  10. Blend all ingredients well
  11. Spread on cooled cupcakes.
