Prepare zesty Greek salad pita according to recipe instructions below.
Enjoy two pita halves with half of the salad mixture.
Store the remaining pita and salad mixture in separate airtight containers in the fridge for later in the week.
In a bowl, make Greek salad kit with dressing & toppings according to packet instructions. Add in extra feta and olive oil and gently toss.
Open the pita halves and fill with the salad mixture.
TIPS: to warm the pita, preheat the oven to 180C. Wrap pita in foil and bake for 8 to 10 minutes.
If you are unable to find a Greek salad kit at the supermarket, make your own by combining diced cucumber, tomato, feta, olives and mixed salad leaves.
Drizzle with olive oil & lemon juice.
