Preheat oven to 375 degrees. Line a baking sheet with foil and coat with nonstick cooking spray or coat cooking sheet with baking spray.
Cut zucchini in 1/2 inch wide fries. In a gallon-sized resealable plastic bag, combine the flour, salt and pepper to taste. Toss the fries in the bag to evenly coat. In a shallow bowl, whisk the eggs together. In a second bowl combine the bread crumbs, cheese, and seasoning. Working in batches, shake off the excess flour before dipping the fries in the egg wash. Allow the excess to drip off, then dredge in the panko mixture.
Transfer to prepared baking sheet and spray the fries with cooking spray. Bake for 18-20 minutes, until the panko begins to get golden brown, flip half way through baking.
