  • 1 1/2 cups high-quality whole milk ricotta
  • Zest from one lemon
  • 1 teaspoon fresh thyme leaves, finely chopped
  • 1 1/2 cups favorite fresh tomato sauce
  • Parmigiano Reggiano, for serving, optional
