  • 1/2 t lemon juice

Directions

  1. Slice zucchini into long strips using a mandolin or vegetable peeler
  2. Sauté in a pan for about 5 minutes on each side, sprinkling each with punches of salt
  3. In a bowl, combine goat cheese, parsley, and lemon juice and mash together until smooth
  4. Lay out zucchini slices and spread goat cheese mixture in an even layer across each
  5. Roll the zucchini tightly and hold together with a toothpick
