  • Clafouti is traditionally served warm or at room temperature, but I found I actually preferred it cold, straight from the fridge the day after it was baked.
  • 1 pound fresh cherries, stemmed and pitted
  • 1/4 cup heavy whipping cream
  • 4 large eggs
  • 1 cup milk
  • 1/2 cup all-purpose flour
  • 1 vanilla bean
  • 1/2 cup sugar
  • 3/4 teaspoon lemon zest
  • 1/2 teaspoon kosher salt
  • Powdered sugar
