Sugar-Free Christmas Cake - I Quit Sugar

Ingredients

  • 2 cups gluten-free self-raising flour.
  • 1 cup shredded coconut.
  • 1 cup almond meal.
  • 1/4 cup raw cacao powder.
  • 1 teaspoon baking powder.
  • 2 teaspoons cinnamon, ground.
  • 2 teaspoons ginger, dried.
  • 2 teaspoons cardamom, ground.
  • 1/2 teaspoon cloves, ground.
  • 1 medium orange, zested.
  • 1 cup walnuts, chopped.
  • 100 g 85–90% dark chocolate, coarsely chopped.
  • 200 g unsalted butter, cubed.
  • 1/2 cup rice malt syrup.
  • 4 eggs.
  • 2 tablespoons brandy.
  • 2 cups beetroot, grated.
  • 1/2 cup almonds, blanched (optional).
