  • 1 cup crunchy peanut butter
  • 3 tablespoons soy sauce more as needed
  • 2 tablespoons chile crisp more to taste
  • 2 teaspoons sesame oil
  • 2 teaspoons ginger finely grated; fresh
  • 1 1/2 cups cucumber thinly sliced
  • 1 bunch scallions thinly sliced
  • 2 tablespoons crystallized ginger more for garnish; chopped
  • 1 tablespoon lime juice more to taste; fresh
  • cilantro optional; for serving; or basil; chopped
