Ingredients

  • 1 tablespoon white sesame seeds toasted
  • 3 cloves garlic minced; medium; about 1 tablespoon
  • 2 scallions thinly sliced
  • 2 tablespoons neutral oil such as peanut 30 ml; vegetable, or canola, divided
  • 1 tablespoon black vinegar 15 ml
  • 1 tablespoon light soy sauce 15 ml
  • 1 teaspoon dark soy sauce 5 ml
  • 1 teaspoon granulated sugar 5 g
  • 1 tablespoon Sichuan preserved mustard greens cui mi ya cai; optional
  • 4 ounces thin fresh Chinese wheat noodles 120 g; preferred; 80 g; or 3 ounces dried thin chinese noodles or angel hair pasta; or fresh thin egg pasta
  • 1 1/2 tablespoons chili oil with sediment 22 ml; or to taste
  • Kosher salt to taste
  • 2 tablespoons roasted peanuts for serving
