  • 1 shallot, peeled and thinly sliced into half moons
  • A few mushrooms, chopped (opt)
  • Kosher salt and pepper
  • 5 large eggs, beaten
  • ¾ cup 1% low-fat milk
  • 1 cup shredded cheese, Gruyete works well, or mozzarella or cheddar
  • 1 teaspoon chopped thyme or tarragon, optional
  • 2 cups cooked quinoa or another grain
