Bacon Cheddar Muffin

Ingredients

  • 1 3/4 c flour
  • 1/3 c cornmeal
  • 2 T sugar
  • 2 t baking powder
  • 1/8 t salt
  • dash red pepper
  • 8 slices cooked bacon
  • 1/2 c (2oz) shredded cheddar cheese
  • 1 c milk
  • 1 egg (beaten)
  • 3 T butter (melted & cooled)
  • 1/2 t Dijon mustard

Directions

  1. preheat oven to 400
  2. stir flour,cornmeal,sugar,b. powder, salt & red pepper
  3. stir in bacon & cheese to coat
  4. in another bowl- stir milk,egg butter & mustard
  5. make well in center of dry ingredients & add wet ingredients - blend just until combined
  6. put into greased Muffin pans
  7. bake 15-20 min
