Ingredients
- 4 medium red beets, tops cut off and set aside
- ½ English cucumber, diced, divided
- 1 small ripe avocado
- ½ red onion, diced
- 2 garlic cloves, minced
- ½ cup fresh dill
- 2 cups vegetable stock
- 2 tablespoons sherry vinegar
- ½ teaspoon salt
- ¼ teaspoon fresh ground pepper
- 3 radishes, diced
