Blender Banana Muffins

Ingredients
- 2 ripe bananas
- 2 eggs
- 1/2 cup coconut sugar
- 1/2 cup plant milk
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 Tbs. coconut oil or any nut butter
- 1 tsp. vanilla
- 2 cups rolled oats
- 1/2 cup unsweetened coconut (optional)
- mini chocolate chips or blueberries
Directions
Put all the ingredients into the blender. (Other than chocolate chips or blueberries).
Preheat oven to 350. Fold in blueberries, coconut or chocolate chips. Divide into 12 muffin tin. Bake for 20-22 minutes.
